In Italy on Azzurri mountains, as Leopardi named Sibillini mountains, in the small kitchen gardens, an interesting and old legume is being cultivated: the field pea. Our aim is to rediscover it and to let know its important properties.
For this reason we have decided to match it with spelt, thus offering to our consumer one complete course.
The spelt used is 100% Italian and is only “Triticum Dicoccum” spelt, the most precious variety. It comes from Tuscany and Umbria.
Our spelt and wood-pea flours are completely milled by us and they are 100% wholegrain. Therefore they contain most of the properties present in the more external part of the wheat.
The pasta making is marked by a slow drying process at low temperature enabling to preserve most of the nutrition and organoleptic properties of the grain.

It is a complete course that can be seasoned only with raw oil and butter, as among the ingredients we have used also spices, giving it that unique and unmistakable taste only this pasta has.
The fibres values contained in this food speciality are higher than a normal whole durum wheat pasta (INRAN data bank). This food speciality contains in average about 30% more fibres than a normal whole durum wheat pasta .
