Maybe already known 12.000 years ago, barley is a plant maybe coming from West Asia and from North East Africa arrived in Europe before wheat and now cultivated in almost all countries of the world. We have decided to transform it in flour with an unique method enabling us to manufacture a 100% wholegrain flour and then we have decided to make pasta with it using a slow drying process at low temperature enabling us to preserve most of the nutrition and organoleptic properties of the grain.

The result we propose is a food speciality purely of barley and water, organic, 100% wholegrain.

The values of the fibres contained in this food speciality are higher than the values usually given for a normal whole durum wheat pasta (INRAN bank data). This food speciality contains in average almost twice the quantity of fibres contained in a normal whole durum wheat pasta.
